What's with these players as soon as they're obviously beat they book before the game or math ends? Is there some advantage for them that way? I find it very inconsiderate and unsportsmanlike.

Guilty. Not always, but when I´m unsatisfied with my play I just can´t stand to stay til the bitter end. Of course I let the opponent finish a good break first.
I don't see your problem. To be interested and competitive, most, I am sure, are playing for points. As soon as a player sees he is beaten, then it is probably wiser to close and find another game for another chance. Forfeiting is quite common in this type of game, real or virtual.
