on the login page, under start game click on settings 

Once you login to a game, open another window of the "play now" (Room selection) and Click on Game Settings before you click Game Start.

Then you can modify your settings, age, gender & country.
You can also add a personal profile picture if you have an active subscription but it must be within a certain size limit around 94x94 pixels, sometimes smaller depending on the quality of the image.
